gluten-free baked potato recipe

Baked Potato

Yield: 4 servings

Ingredients:

4 Large Potatoes (Russet Potatoes are a good choice)
Salt
Choice of gluten-free toppings such as sour cream, butter, cheese, bacon, scallions, herbs

Directions:

  1. Preheat the oven to 392°F (200°C).
  2. Wash the potatoes well and leave them wet.
  3. Place each potato on a piece of aluminum foil large enough to wrap the whole potato.
  4. Salt the potato generously and firmly wrap in the aluminum foil.
  5. Spread the potatoes on a baking sheet and place on the middle rack in the oven.
  6. Bake 60-90 minutes (depending on the size of your potatoes) until tender. Check with a fork if they are done.
  7. Remove from the foil and cut a slit into the top of the potato and serve your choice of with toppings.

Baked potatoes are great to serve with meats, or just on it’s own with a salad.

Baked potatoes are also great to turn into mashed potatoes if you have left-overs.
