BBQ Chicken Wings

Yield: 4 servings

Ingredients:

2 pounds chicken wings, split into wingettes/tips and drumettes
Salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon chili powder (start with a little, and then adjust for desired spiciness)
1/4 cup gluten-free BBQ sauce
1 tablespoon olive oil
1 teaspoon dried chili flakes (start with a little, and then adjust for desired spiciness)

Directions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil.
  2. In a large bowl, season the chicken wings with salt, pepper, garlic powder, paprika, and chili powder. Toss to coat the wings evenly.
  3. Arrange the seasoned chicken wings in a single layer on the prepared baking sheet.
  4. Bake in the preheated oven for 35-40 minutes, or until the chicken wings are cooked through and crispy.
  5. In a small saucepan, combine the gluten-free BBQ sauce, olive oil, and dried chili flakes. Heat the sauce over low heat, stirring occasionally, until warmed through.
  6. Remove the baked chicken wings from the oven and transfer them to a large mixing bowl.
  7. Pour the warm BBQ sauce mixture over the chicken wings and toss to coat them thoroughly.
  8. Return the coated chicken wings to the baking sheet and place them back in the oven for an additional 5-7 minutes, allowing the sauce to caramelize slightly.
  9. Remove from the oven and let the chicken wings rest for a few minutes.
  10. Serve the gluten-free BBQ chicken wings hot.
