BBQ Chicken Wings
Yield: 4 servings
Ingredients:
2 pounds chicken wings, split into wingettes/tips and drumettes
Salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon chili powder (start with a little, and then adjust for desired spiciness)
1/4 cup gluten-free BBQ sauce
1 tablespoon olive oil
1 teaspoon dried chili flakes (start with a little, and then adjust for desired spiciness)
Directions:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil.
- In a large bowl, season the chicken wings with salt, pepper, garlic powder, paprika, and chili powder. Toss to coat the wings evenly.
- Arrange the seasoned chicken wings in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 35-40 minutes, or until the chicken wings are cooked through and crispy.
- In a small saucepan, combine the gluten-free BBQ sauce, olive oil, and dried chili flakes. Heat the sauce over low heat, stirring occasionally, until warmed through.
- Remove the baked chicken wings from the oven and transfer them to a large mixing bowl.
- Pour the warm BBQ sauce mixture over the chicken wings and toss to coat them thoroughly.
- Return the coated chicken wings to the baking sheet and place them back in the oven for an additional 5-7 minutes, allowing the sauce to caramelize slightly.
- Remove from the oven and let the chicken wings rest for a few minutes.
- Serve the gluten-free BBQ chicken wings hot.
These gluten-free chicken wings make a fantastic appetizer or a great dish to bring for a potluck. Add a couple slices gluten-free bread and a salad to make it a quick lunch or dinner.
