Gluten-Free French Toast
Yield: 4 servings
Ingredients:
8 slices of gluten-free bread (I prefer white gluten-free bread for making French Toast, but you can use your favourite bread)
4 large eggs
1 cup milk
2 tablespoons sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)
Butter or oil, for cooking (it tastes great when you mix both in the pan!)
Maple syrup, berries, or powdered sugar, for serving (optional)
Directions:
- In a deep plate or shallow bowl, whisk together your eggs, milk, sugar, vanilla extract, and ground cinnamon (if you use it) until well combined.
- Heat a large skillet or griddle over medium heat and add a small amount of butter and/or oil (if you only use butter, watch your temperature as it burns easier than oil. Adding some oil to your butter helps with that).
- Dip a slice of gluten-free bread into the egg mixture, allowing it to soak for a few seconds on each side. Be sure to fully coat the bread with the mixture, but don’t let it become overly saturated. This is the step that’s a bit different than with “regular” gluten bread – if you soak gluten-free bread too long, it will disintegrate. Test with your first slice – remember you can always soak it a second time if your first attempt was too short.
- Transfer the soaked bread to the preheated skillet or griddle and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Repeat the process with the remaining slices of bread, adding more butter and/or oil to the pan as needed.
- Once all the slices are cooked, serve the gluten-free French toast immediately.
- You can serve the French toast as is or top it with maple syrup, fresh berries, or a dusting of powdered sugar, according to your preference.
