Loaded Nachos
Yield: 4 servings
Ingredients:
8 ounces gluten-free tortilla chips
1 pound ground beef
1 tablespoon olive oil
1 teaspoon chili powder (to taste)
1/2 teaspoon cumin (optional)
1/2 teaspoon paprika
1/2 teaspoon garlic powder
Salt and pepper, to taste
1 cup shredded cheddar cheese (or cheese of your choice)
1 cup diced tomatoes
1/4 cup sliced jalapenos (remove seeds)
2 green onions, thinly sliced
1 ripe avocado, diced
1/4 – 1/2 cup sour cream
Directions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Arrange the gluten-free tortilla chips in a single layer on the prepared baking sheet.
- In a skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned and cooked through, breaking it up into crumbles with a spatula.
- Stir in the chili powder, cumin (optional), paprika, garlic powder, salt, and pepper to the cooked ground beef. Cook for an additional 2-3 minutes to allow the flavors to meld together.
- Sprinkle the cooked ground beef evenly over the tortilla chips.
- Top the chips and beef with shredded cheddar cheese.
- Place the baking sheet in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
- Remove the loaded nachos from the oven and let them cool slightly.
- Sprinkle diced tomatoes, sliced jalapenos, and green onions over the nachos.
- Top with diced avocado and dollops of sour cream.
- Serve the gluten-free loaded nachos immediately.
