Loaded Nachos

Yield: 4 servings

Ingredients:

8 ounces gluten-free tortilla chips
1 pound ground beef
1 tablespoon olive oil
1 teaspoon chili powder (to taste)
1/2 teaspoon cumin (optional)
1/2 teaspoon paprika
1/2 teaspoon garlic powder
Salt and pepper, to taste
1 cup shredded cheddar cheese (or cheese of your choice)
1 cup diced tomatoes
1/4 cup sliced jalapenos (remove seeds)
2 green onions, thinly sliced
1 ripe avocado, diced
1/4 – 1/2 cup sour cream

Directions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange the gluten-free tortilla chips in a single layer on the prepared baking sheet.
  3. In a skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned and cooked through, breaking it up into crumbles with a spatula.
  4. Stir in the chili powder, cumin (optional), paprika, garlic powder, salt, and pepper to the cooked ground beef. Cook for an additional 2-3 minutes to allow the flavors to meld together.
  5. Sprinkle the cooked ground beef evenly over the tortilla chips.
  6. Top the chips and beef with shredded cheddar cheese.
  7. Place the baking sheet in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
  8. Remove the loaded nachos from the oven and let them cool slightly.
  9. Sprinkle diced tomatoes, sliced jalapenos, and green onions over the nachos.
  10. Top with diced avocado and dollops of sour cream.
  11. Serve the gluten-free loaded nachos immediately.
