Gluten-Free Omelette

Yield: 4 servings

Ingredients:

  • 8 large eggs
  • 1/4 cup milk (dairy or non-dairy)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup diced ham
  • 1 green bell pepper, diced
  • 1 tomato, diced
  • 1 cup shredded cheese (cheddar, Swiss, or your favorite variety)
  • Fresh parsley or chives, for garnish (optional)

Directions:

  1. In a large bowl, whisk together the eggs and a quarter of the milk. Season with salt and pepper to taste. Set aside.
  2. Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
  3. Add the diced ham to the skillet and sauté for 2-3 minutes until slightly browned. Remove the ham from the skillet and set it aside.
  4. In the same skillet, heat the remaining tablespoon of olive oil over medium heat.
  5. Add the diced green bell pepper and sauté for 2-3 minutes until softened.
  6. Add the diced tomato to the skillet and cook for an additional 1-2 minutes until slightly softened.
  7. Pour the whisked 1/4 of the eggs for the omelette into the skillet, spreading them evenly .
  8. Sprinkle the 1/4 each of the cooked ham and vegetables evenly over the eggs.
  9. Let the omelette cook for a few minutes until the bottom is set and the top is still slightly runny.
  10. Sprinkle the 1/4 of the shredded cheese evenly over one half of the omelette.
  11. Using a spatula, carefully fold the other half of the omelette over the cheese-covered half, creating a half-moon shape.
  12. Cook the omelette for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.
  13. Remove the omelette from the skillet and transfer it to a serving plate.
  14. Repeat for reach omelette.
  15. Garnish with fresh parsley or chives, if desired.

Serve the gluten-free omelette as a delicious breakfast with gluten-free toast and/or breakfast potatoes, or a salad.

You can use the omelette recipe to create other variations with different fillings as well – there are really no limits. You can change the vegetables, cheese and meat options to your taste, and experiment with a variety of different ideas.

The reason that sometimes you may encounter an omelette that is not gluten-free is because some chefs use a small amount of flour to bind the eggs. But that is not necessary, and with this recipe you can make gluten-free omelettes just a easily.
