Gluten-Free Omelette
Yield: 4 servings
Ingredients:
- 8 large eggs
- 1/4 cup milk (dairy or non-dairy)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup diced ham
- 1 green bell pepper, diced
- 1 tomato, diced
- 1 cup shredded cheese (cheddar, Swiss, or your favorite variety)
- Fresh parsley or chives, for garnish (optional)
Directions:
- In a large bowl, whisk together the eggs and a quarter of the milk. Season with salt and pepper to taste. Set aside.
- Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
- Add the diced ham to the skillet and sauté for 2-3 minutes until slightly browned. Remove the ham from the skillet and set it aside.
- In the same skillet, heat the remaining tablespoon of olive oil over medium heat.
- Add the diced green bell pepper and sauté for 2-3 minutes until softened.
- Add the diced tomato to the skillet and cook for an additional 1-2 minutes until slightly softened.
- Pour the whisked 1/4 of the eggs for the omelette into the skillet, spreading them evenly .
- Sprinkle the 1/4 each of the cooked ham and vegetables evenly over the eggs.
- Let the omelette cook for a few minutes until the bottom is set and the top is still slightly runny.
- Sprinkle the 1/4 of the shredded cheese evenly over one half of the omelette.
- Using a spatula, carefully fold the other half of the omelette over the cheese-covered half, creating a half-moon shape.
- Cook the omelette for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.
- Remove the omelette from the skillet and transfer it to a serving plate.
- Repeat for reach omelette.
- Garnish with fresh parsley or chives, if desired.
Serve the gluten-free omelette as a delicious breakfast with gluten-free toast and/or breakfast potatoes, or a salad.
You can use the omelette recipe to create other variations with different fillings as well – there are really no limits. You can change the vegetables, cheese and meat options to your taste, and experiment with a variety of different ideas.
The reason that sometimes you may encounter an omelette that is not gluten-free is because some chefs use a small amount of flour to bind the eggs. But that is not necessary, and with this recipe you can make gluten-free omelettes just a easily.
