Gluten-Free Pasta with Alfredo Sauce
Yield: 4 servings
Ingredients:
1 package (about 12 ounces) gluten-free penne pasta like penne or rotini (Barilla for example makes GF pasta that cooks well)
2 tablespoons butter
2 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper, to taste
Chopped fresh parsley, for garnish (optional)
Directions:
- Cook the gluten-free penne pasta until al dente (that’s usually a few minutes shorter than package instructions). Drain and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute.
- Reduce the heat to low and pour in the heavy cream. Stir gently to combine with the garlic and butter.
- Cook the cream mixture for about 2-3 minutes, stirring occasionally, until it begins to thicken.
- Add the grated Parmesan cheese to the skillet and continue stirring until the cheese is melted and the sauce is smooth and creamy.
- Season the Alfredo sauce with salt and pepper to taste. Keep in mind that the Parmesan cheese is naturally salty, so adjust the seasoning accordingly.
- Add the cooked gluten-free penne pasta to the skillet and toss to coat the pasta evenly with the Alfredo sauce.
- Cook for an additional 1-2 minutes to warm the pasta through.
- Remove from heat and garnish with chopped fresh parsley, if desired.
- Serve the gluten-free penne with Alfredo sauce immediately while hot.
You can serve this as a standalone dish or add grilled chicken, shrimp, or vegetables for extra flavor and texture, or serve with a salad on the side.
