Prosciutto Melon Mozzarella Skewers
Yield: 4 servings
Ingredients:
- 1 small cantaloupe melon
- 8 ounces fresh mozzarella balls (ciliegine or bocconcini)
- 8 thin slices of gluten-free prosciutto
- Balsamic glaze, for drizzling (optional), infused with finely sliced basil and a sprinkle of pepper
- Wooden skewers
- Fresh basil leaves
Directions:
- Cut the cantaloupe melon into bite-sized cubes.
- Drain the mozzarella balls if they are stored in liquid, and pat them dry with a paper towel.
- Take a slice of prosciutto and cut it in half, creating two strips.
- To assemble each skewer, loosely thread a piece of cantaloupe melon onto the skewer, followed by a mozzarella ball, a folded strip of prosciutto, repeat until the skewer is filled.
- Repeat the process with the remaining ingredients to make additional skewers.
- Arrange the skewers on a serving platter.
- Drizzle the skewers with balsamic glaze, if desired, for an extra burst of flavor and garnish with the fresh basil leaves.
Serve the gluten-free skewers with cantaloupe melon, mozzarella balls, and prosciutto as an appetizer or a light and refreshing snack. If you bring them to a potluck event, keep them cooled until you serve them, and only apply the glaze and garnish shortly before serving.
