Oven-Roasted Chicken Legs

Yield: 4 servings

Ingredients:

8 chicken legs
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:

  1. Preheat your oven to 410°F (210°C). Line a baking sheet with parchment paper or foil for easy cleanup, or use a non-stick or ceramic baking pan.
  2. In a small bowl, mix together the paprika, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper to create a spice rub.
  3. Pat the chicken legs dry with paper towels.
  4. Rub the chicken legs evenly with the spice mixture, making sure to coat all sides, the drizzle the olive or vegetable oil over it.
  5. Place the chicken legs on the prepared baking sheet, leaving some space between each piece.
  6. Bake in the preheated oven for about 35-40 minutes or until the chicken legs are cooked through and the skin is crispy and golden brown. The internal temperature should reach 165°F (74°C).
  7. Once cooked, remove the chicken legs from the oven and let them rest for a few minutes before serving.

Serve the oven-baked chicken legs hot as a delicious main dish, they pair well with a variety of sides such as roasted vegetables, mashed potatoes, fries, or a fresh salad.
